Perfect for slow cooking over low-medium heat, the Kerala Handi is suitable for simmering and slow cooking required for making sumptuous curries scented with earthiness of the pot since it distributes heat evenly. Cooking in a Terracotta pot requires ‘seasoning’ i.e. process of adding water to make the pot ready for repeated heat absorption. Add three quarters of water to the pot if cooking on stove or oven and keep the heat at low. Prior to seasoning, soak the Terracotta pot in water for two hours so the clay absorbs water.

Like many other handcrafts, making Terracotta products is a patient and painstaking job executed by highly skilled artisans. Terracotta is the clay used create terracotta pottery on a potter’s wheel. The fascinating process of lightly watering the clay, kneading to a dough and plying it on the wheel to form desired shapes gives its unique form. The object is then wood-fried or fired with combustible materials for proper hardening and the final “baked clay” known as Terracotta is glazed to keep the pores shut and keep water at bay.

- Ok to use in microwave. Use low-medium heat while cooking at the beginning, and slowly increase temperature with repeated use.
- Gently dab clean with a soft sponge soaked in tepid water, apply mild detergent if necessary once soaked in water. Do not use stainless steel/ metal scrubber.
- Dry thoroughly with clean cloth.
- Use paper tissue/ clean cloth between each product while stacking to avoid any scratches and keep its natural sheen intact.
